Happy Thanksgiving Sweet Potato Muffins.
A home filled with amazing aromas, family, friends and food.
A holiday to be thankful for so many things, to give thanks to others and to relax…but not for the cook, unless you play your cards right.
As a foodie, I do love Thanksgiving, but not for the main course. The big bird.
God knows that I can get creative in planning, prepping and preparing the perfect poultry, (say that three times fast), but for me my true passion is in the appetizers and sides.
The turkey is and will always be the center of attention and it will always be the big boss and the star of the show, but do not forget that there are many players that need to come together to make a perfect performance.
Enter the perfect muffin.
Me personally…I’m a nut.
I’m told that I try to do too much and that I should take the easy way out, but no way.
For me, part of the celebration is a celebration of flavor.
One example are my homemade Sweet Potato Muffins.
Don’t get me wrong. If I see a basket of Pillsbury crescent rolls on the table you can be sure than I will eat them like they are going out of style, but a basket of my muffins will, no doubt, elicit some sounds of approval.
Trust me. Once these muffins are on the table your crew will run in faster than your crazy neighbor running to Walmart on Black Friday at 3 am.
You know the one I’m talking about. The lady with the big folder of coupons and the 11 cats. Yup, every town has one.
Don’t you just want to lick the bowl? ( Don’t. Raw eggs= no no)
Cinnamon, sugar, nutmeg and then you fold in the plump raisins at the end. Mmm, delicious.
If time is of the essence then use your reliable standard or even go to a bakery for something fresh. This will free up some oven space and leave you more time to do other things. But, if you plan accordingly you can bake the sweet potatoes the night before and make the muffins the first thing in the morning.
I know, I know…you have a lot going on. Guess what? We all do, just trust me ok? Try it this once.
These are simple muffins, in the way that they are not loaded with cream cheese, drizzled with chocolate ganache, sprinkled with butterscotch flakes or anything else obnoxiously sweet.
They are not Thanksgiving themed. I’m sure you can fiddle with one to make it look like a turkey or a even Plymouth Rock, but that’s your call.
The beauty in these are in their flavor.
And at the end, your house will be filled with the delicious scents of cinnamon, nutmeg and brown sugar and your guest will be asking you to make these at every gathering.

- 1 1/2 Cups of All-Purpose Flour
- 1 Tbsp Baking Powder
- 1 Tsp Cinnamon
- 1 Stick of Butter ( Melted)
- 1 Egg. Beaten.
- 1 Cup Mashed Cooked Sweet Potatoes
- 1/4 Cup Dark Brown Sugar, packed.
- 1/4 Tsp Nutmeg
- 1/2 Cup Whole Milk.
- 1/4 Cup Raisins.
- Preheat oven to 375 F
- Grease a medium sized muffin pan
- In a large bowl, stir together flour, brown sugar, baking powder, salt, cinnamon and nutmeg.
- In a separate bowl, beat together butter, milk, egg and sweet potato.
- Combine butter mixture with flour mixture.
- Mix lightly.
- Fold in raisins.
- Spoon mixture evenly into prepared muffins pans.
- Bake 20-25 minutes.
- Yields 10-12 muffins.
- Enjoy for breakfast, lunch, brunch, dinner or anytime.
