I originally posted a version of this recipe a few years ago and received rave reviews about it, so I wanted to post it again.

I  was not the perfectionist with the pictures and stories as I am now, but the recipe is really worth sharing.

The Ultimate Pub Style Beer and Cheese Dip.

Let me be perfectly upfront with you.

This is going to be one of the best things that you have ever tasted in your life.

I know this sounds a little over the top for a simple “dip”…but trust me, it’s so much more than just a dip.

Imagine being in the middle of a tornado, ok?

Now, imagine that tornado being made of cheese sauce..but not your average cheese sauce, but, The Ultimate Cheese Sauce.

Confident? Yes

Drunk? NO!!!!

Well, there is beer in it and there are 6 bottles to a 6 pack and the recipe does call for beer so as I was perfecting the recipe I had to regulate the amount of alcohol vs cheese ratio numerous times and by default…

Let’s just say I had to call a cab to get me home from the test kitchen but the good thing is…

I created your new favorite food item.

The Ultimate Pub Style Beer and Cheese Dip
Serves 4
The most delicious dip that you will ever have.

Ingredients
  1. 4 Tbsp salted butter
  2. 3 Tbsp. all-purpose flour
  3. 3/4 cup whole milk
  4. 1/2 cup beer (use a quality lager. Not Budweiser)
  5. 1 tbsp tabasco sauce
  6. 1 tsp. dijon mustard
  7. 1/2 tsp onion powder
  8. 1/4 tsp cayenne
  9. 1/4 tsp. salt
  10. 1/4 tsp chopped parsley (for garnish)
Instructions
  1. In a large sauce pan over medium heat, slowly melt the better.
  2. Once the butter is melted, whisk in the flour until smooth.
  3. Remove pan from the stove and whisk in 1/3 of the milk until it's smooth.
  4. Then whisk in another 1/3 of the milk slowly.
  5. Now add in the remainder of the milk and continue to whisk until it's smooth.
  6. Stir in the beer, tabasco, dijon, onion powder, cayenne and salt.
  7. Bring the pan back to a medium heat and stir until the sauce is smooth and thick.( 2 min)
  8. take off heat.
  9. Whisk in cheese a little at a time and make sure it is melting nicely before adding more cheese.
Notes
  1. The reason why I break the milk amounts into thirds is to make sure that the sauce is smooth and all bits of flour are dissolved.

I don’t think I know of a single living soul that doesn’t LOVE mozzarella.

Think about it…

Have you ever heard someone say..“Yeah, gimmie a slice and hold the cheese.” ????

NO!  You haven’t! I can almost guarantee it.

In fact, I hit the streets to ask what New Yorkers favorite pizza toppings are and guess what the answers were?

Extra Cheese…..BAAM!

I also asked people what are their favorite cheese’s and the 1st responses were always..yup, you guessed it.

Mozzarella.

And finally, I asked..”What is the best cheese to eat when you have tomatoes and basil or want to cut it into sticks and fry it?

The answer. You know it baby…Mozzarella again.

Saint Patrick’s Day Corned Beef with Rustic Veggies and Beer.

Oh yeah, St. Patrick’s Day is March 17th, and that can only mean one thing.
Getting drunk at 9 am??  No…….well, maybe..but it’s a “day for wearing of the green” and other kick-ass Irish traditions, like making Irish soda bread, watching the parade on tv,  listening to Irish music and ..ok, perhaps getting drunk early in the morning.

Many of you don’t know that St. Patrick was not even born in Ireland, in fact..it is said that he may have been,,,ugh..don’t shoot the messenger, Italian. Yup.
Waiter…extra whiskey in my coffee please.

So before you start drinking green beer and dancing with strangers make sure that you gather up all of your ingredients and ready to have the most delicious corned beef and cabbage that you have ever had.

It’s January on Long Island and it is oh so cold, but that isn’t keeping me away from the outdoor grill, aka, The Beast.

In keeping to my January foodie theme, “The Month of Meat”, I am officially a Porterhouse perfectionist.

The recipe at the bottom of this blog will give you simple step by step instructions for grilling the most amazing Porterhouse steak that has ever been placed before you.

Usually this time of year I am busy with my slow cooker making soups and sauces and other slow food creations but that’s not the case this year, so far.

Even thought it’s April, for some reason Mother Nature decided to grace us with 30 degree weather and a bit of sleet and snow, but that’s not going to stop us from grilling, is it?

Well, perhaps but the nice weather is on it’s way and sooner than later we’ll be drinking beer in the backyard, floating in the pool and chillin as we’re grillin.
